Ginger Cake Recipe

While this is not the prettiest cake it is one of the simplest and yummiest! It is simply fresh whipped cream and spice cookies, or the thin chocolate cookies or the thin lemon cookies. It must be these simple hard old fashioned cookies, I used the ones shown.

1. Whip a pint of heavy whipping cream with about a 1/4 cup of confectionery sugar and a 1/2 tsp of vanilla till stiff.
2. Then You simply layer the cookies and the whipped cream in small dishes or a spring form pan.
3. Tap gently to make it solid and compact, this is important.
4. Cover tightly and refrigerate at least 24 hours. The cookies soften and it’s a yummy creamy simple cheap desert!
Top with fresh whipped cream and cookie crumbs or whole cookies to serve.
