Lemon Curd Recipe

This is my very favorite lemon curd recipe:
Place the zest of a lemon in your blender or food processor along with 1.5 cups of sugar and blend till fine.
Add 1/2 cup of fresh squeezed lemon juice, one stick of butter, four eggs and a pinch of salt. Blend till smooth.
Place in microwave safe bowl and nuke for two minutes and stir.
Repeat one more time.
Now nuke for 1 minute and stir.
Repeat until thick and sheats off your spoon. Cover and chill till set.
This Makes four cups! Enjoy!

you can serve with toast or biscuits, fill gram cracker tarts, layer with cooked puff pastry, mix 50/50 with Greek yogurt. But my favorite is layered with whipped cream, lady fingers, puff pastry or pound cake and fresh berries.
